尉氏青豆產于開封所屬的尉氏縣,簡稱尉青,又稱尉青豆。
據明嘉靖《尉氏縣志》記載,當時尉氏就已大面積種植青豆清末到建國初,每逢中秋節過后,大批港澳商人紛紛前來采購。建國初期,年出口量達七、八百噸,遠銷港、澳、美國、西德。加拿大等30多個國家和地區,六十年代后,壓縮種植面積,中斷了出口,80年代開始擴大種植面積,使尉氏青豆重返國際市場,出口量達到歷史最高水平。1983年還曾榮獲國家外經?Q部?C發的榮譽證書。
尉氏青豆豆料結實,大小勻稱,色澤青綠,表面光潤,人稱‘碧玉翠珠’。該豆特征是豆胚部外圍有一墨圈,中間有一雪白點,稱為白門。據測定,尉氏青豆含有蛋白質、脂肪和多種維生素,其蛋白質含量高達43%,居各類品種之首,是制作各種豆制的理想原料。用其制作的的豆腐、豆腐腦、腐竹等營養食品質地細膩,味首清香,而且對胃中積熱。小便不利等癥狀具有一定療效,用尉氏青豆做成的菜肴是酒席宴會中的美味佳品。
Weishi Green Beans
Weishi green beans are produced in Weishi County in Kaifeng City. According to Weishi County Record, large area had been planted green beans in Jiajing period in Ming Dynasty. Its productions have sold into more than 30 countries and regions like Hong Kong, Macao, America, West Germany, etc.
Weishi green beans are hard, well-balanced, green, gloosy and are praised as jaspers. According to researches, these beans contain rich nutrition, among which protein content ranks at the top of the similar products. Thus, they are ideal materials to make all kinds of bean products.
