蘭考豆腐乳是蘭考縣的地方特產,屬傳統風味食品。
蘭考豆腐乳歷史悠久,創始于明朝萬歷年間,由蘭陽縣(今蘭考縣)城西街福興醬菜園制作,距今已有400多年的歷史。據記載,明朝萬歷年間,朝中有一姓梁的御史,祖籍是蘭陽縣城。一次御史神宗皇帝出京游覽,來汴梁(開封),順便到蘭陽縣帶回“崔福興醬園”制作的豆腐。皇帝食后大加稱贊,曰“臣考于孤,迎風十里香”。從此,蘭陽豆腐乳“迎風十里香”的美名傳為佳話,譽滿全國。
蘭考豆腐乳選料考究,做工精細,選用秋季收獲得的無秕粒、無霉變、無雜粒的飽滿黃豆和當地產的芝麻油為原料。其制作過程是:先將精選的黃豆和當地產的芝麻油為原料,切成5厘米見方,一厘米厚的塊與芝麻油、曲酒、五香粉、精鹽等裝入瓷罐或廣口瓶(原為竹簍),經過太陽暴曬(氣溫30℃~36℃)25~30 天。如果氣溫低于25℃,可用火炕加溫,成熟后存一段時間成了醬香濃郁,風味獨特的豆腐乳。
蘭考豆腐具有醬紅透明,細膩黏軟,咸中有香,香中有甜的獨特風味,且含蛋白質、脂肪、氨基酸與多種維生素,有增食欲、助消化、健胃腸等功能。1985年經省有關部門鑒定,各項指標都達到或超過商業部頒發的標準。該產品始終受到省內外廣大消費者喜愛。
Lankao Fermented Beancurd
Lankao Fermented Beancurd is a local specialty as well as a traditional dish. It has a very long history, dating back to the Wanli period of the Ming Dynasty. It was created by the House of Fuxing Pickles in Chengxi Street, Lanyang Town about 400 years ago. According to the document, in the Wanli period of the Ming Dynasty, there was an official, Mr. Liang, whose hometown was the Lanyang town. Once, he came to Kaifeng city to have a visit, when he came back with him some fermented beancurd from the House of Fuxing Pickles to the Emperor. The Emperor endowed it a high admiration with the review: the fragrant smell of the fermented beancurd spreads miles away in the wind. From then on, its nice name of spreading miles away in the wind earned it a great reputation spreading all around our country.
Lankao Fermented Beancurd uses delicate materials and has a very careful cooking process. It chooses high-quality beans and sesame oil. In the terms of its cooking process, we should cut the beancurd into small piece with width of 5 cm and the thickness of 1 cm; put it into wide-mouth bottle with sesame oil, salt and other materials; lay them down under the sun or the light for about 25 to 39 days; keep them for a long time then we can fulfill the delicious fermented beancurd.
Lankao Fermented Beancurd has a particular flavor and contains many kinds of nutrition and several medical functions. It had proved to be suitable with the standards established by the Department of Commerce and is popular with customer in 1985.
