封丘芹菜,俗稱“封芹”。據《封丘縣志》記載:“芹菜四季均有,而春種、夏移、冬成者,嫩而無渣,為封丘特產,遠近馳名。”封芹莖桿短,含鈣量高。生食脆而無渣,細品香味濃厚;熟食則鮮香兼有。封丘芹菜除滿足本縣使用外,還外銷全國各地。
外在感官特征:封丘芹菜形態根冠肥大,根似龍首,葉似鳳尾,莖鞘如笙,色澤鵝黃清雅,入口甘甜脆嫩,細品芹香悠遠,回味余韻綿甜,封丘芹菜根、莖、葉皆可入菜,生食脆而無渣,熟食鮮香兼有,具有蔬、果、藥三品同源之特點。
內在品質指標:經農業部果品及苗木質量監督檢驗測試中心(鄭州)測試,封丘芹菜每100g含維生素c 3.74mg,總糖1.16 mg ,粗纖維0.8 mg,鐵0.17mg,鋅0.16 mg,屬低熱量蔬菜。其粗纖維含量低、糖類、維生素c和鋅的含量較高。封丘芹菜中的粗纖維的實際含量小于0.85%,可溶性總糖達到1.16%。
