“德”字粉又稱湯粉、板粉,是一種特制的食用粉絲。商城生產粉條的歷史悠久,明朝就有人生產。清朝末年,湯泉池、余集一帶就有數百家產戶。首創“德”字粉的是吳河鄉湯泉池村的黃廣順家粉坊,他家于1908年以豌豆、綠豆為原粉,使用本地的泉水洗粉,生產的粉絲不僅產品質量好,且出粉率高,銷路、效益都很好。在他的帶動下,相近的曹廣興、陳宏昌、劉福志等戶粉坊也都相繼仿制,生產經營起這種食用粉絲。
“德”字粉以優質豌豆為原料,用當清涼純凈的泉水漂洗粉絲,制作考究,工藝精湛,成品壓成長34厘米、厚5厘米、重2.5公斤的板塊,四周束以烙有花紋的竹片,竹絲捆扎,層次分明,美觀雅致。“德”字粉晶細清白,久煮不碎,烹炒拌燴皆宜。該品明代開始生產,到清末,全縣有300家作坊制粉,粉商張德興監制的“德”字商標的粉絲最為出名,故稱之為“德”字粉。
“德”字粉絲潔白似玉,粉絲細亮,韌性好,食用時用溫水浸泡,晶瑩剔透,可涼拌、熱炒、煨湯燉肉、包餃子、炸丸子,味道醇美,爽滑可口,久煮不爛,堪稱席中佳品。同時,“德”字粉包裝精細,五斤散亂的粉絲,經過工匠梳理榨制,做成長34厘米、寬30厘米、厚5厘米的精制粉塊,四面光滑如板,層次有致,配以桃紅色的“德”字商標和黑色的絲,不僅美觀大方,而且便于運輸,遠銷兩廣、港澳及東南亞各國,市場供不應求,享有很高的信譽。
