果子貍,亦稱“花面貍”、“白額靈貓”,是一種野生哺乳類動物。其形狀如家貓,但較細長,四肢稍短。產于長江以南地區,地處大別山區的商城縣市其最北產區。果子貍多棲息于深山密林之中,善攀援,夜間活動,嗜食各種果實,兼食谷物和小鳥、昆蟲等。其肉細嫩鮮美,營養豐富,素為山珍上品。
“密炙果子貍”為商城所特有的名菜佳肴,有一套獨特的烹制方法,烹制的果子貍肉呈紫紅色,入口香甜鮮嫩,油而不膩,兼有多重鮮果風味,別具一格。
商城烹制的“密炙果子貍”由來已久。舊時邑人在外做官,多以竹簍裝置果子貍,口封紅紙為禮作奉。南部山民獵獲此物常于冬季林木落葉之時槍擊夾捕。前些年,由于亂伐山林和濫捕野物,商城果子貍逐漸稀少,市場已罕有此物,飯館亦無從經營。黨的十一屆三中全會之后,隨著《森林保護法》的貫徹執行,生態平衡將逐步恢復,商城果子貍亦會絕處逢生,繁衍滋長,為“密炙果子貍”這項名菜提供充足的貨源,以使其傳世不衰。
Shangcheng Secret-roasted Paguma Larvata
Paguma larvata is a wild mammalia animal and always lives in dense forest in the deep mountains. Its meet is fresh, delicate and nutritious, and is always regarded as superior delicacy. Secret-roasted Paguma Larvata is a famous specialty in Shangcheng, which owns a special cooking method. Finished paguma larvate meet is in purple-red color, luscious, fresh and tender, fat but not greasy and contains multiple flavour of fruits at the same time, which makes it so particular.
Shangcheng people began to cook this dish many years ago, when people always hunted this animal in winter when leaves fell. Some years ago, due to people's cutting down trees and hunting wild animals immoderately, paguma larvate reduced quickly so that this dish was rare seen in restaurants. After the Third Plenary Session, with carrying out of Forest Protection Law, paguma larvate in Shangcheng increases gradually, which provides this famous dish plentiful supplies and makes sure its spreading and inheriting.
