鄲城縣“張集熏雞”以“色、香、味、形”四美俱全而聞名遐邇,暢銷豫、魯、蘇、皖。相傳,清乾隆年間,張集周姓人家得宮廷秘方研制而成。嘉慶年間,周家女婿張德立,發揚光大,名聲大震。其工藝獨特,以陳年循環老湯配十幾味中草藥精制而成,熏雞骨酥肉爛皮裂,肥嫩爽口不油膩,色亮形美不松散,實為補陰壯陽、健脾滋胃之佳品。
相傳,清乾隆年間,張集李姓人家得宮遷秘方,經營熏雞。張集熏雞有其獨特的傳統工藝。從宰殺、整形、油炸、蒸煮、抹蜜、搭色等,規范操作,十分考究。多種傳統中草藥為原料,使用陳年循環老湯精制而成。他們(巴斌 李強)制作的熏雞,骨酥肉爛皮裂,肥嫩爽口不油膩,色亮形美不松散。實為補陰壯陽,健脾滋胃之佳品。
