固始鵝是我國著名的地方優良鵝種，主產地是河南固始縣，屬白鵝類型，體型大、頸長呈弓形，頭頂有圓而光滑的肉瘤，公鵝肉瘤大而突出，全身羽毛白色  ，肉瘤、嘴、腿、蹼均為橘黃色，體軀呈長方形，少數鵝頜下有咽袋。
       
    公元582年，隋煬帝車駕臨江都，奏百戲之樂，宴眾愛妃于赤艦船樓上，佳肴近千種，惟金華火腿與固始鵝風掃殘云，新貴人張麗華食之最少，僅食一鵝腿，余菜無問津。無獨有偶，據《中國秘史大全》記載，公元679年，唐代著名詩人駱賓王因反對武則天丟官回閩南，途徑固始，鄉秀陳元光宴駱賓王于固始城關東門樓，元光獻汗鵝塊與其對酌，酒甘鵝盡，駱賓王望著城樓下史河中群鵝戲水，詩興大發，吟起了“鵝，鵝，鵝，曲項向天歌……”陳元光后來主政漳州，將此詩傳誦，留芳于世。 　　
      
    上述典故的真偽我們暫不去考證，但說明了一個事實，固始鵝與金華火腿至少從隋朝時就同時馳名天下，由于詩人的渲染，固始鵝還名重于金華火腿。 　　
       
    鵝最名貴者，乃河南固始之鵝。固始人以飯飼之食，所以那里的鵝最肥，平時都在野外放養，吃的草、蟲，這些與圈養的鵝不一樣， 當然這些鵝做出來的味道也不一樣。如今不僅在河南本地很火，大到市集小到鄉鎮都很流行，甚至現在北京都能看到很多的固始鵝塊火鍋店。


 

Gushi Gooses

    Gushi goose is a good local kind of gooses in China, which is mainly produced in Gushi town. This kind of gooses have big shapes, long and arched-shaped necks, round and smooth sarcoids on the top of heads especially of male gooses, white feathers all over the body, orange sarcoids, mouths and legs, and rectangle bodies. A few gooses have pharynx bag below jaws. Among all kinds of gooses, Gushi Gooses are the most precious. Local people feed them rice so that they become the fattest and raise them wildly to make sure they can eat some natural worms and insects so that they have a unique taste.
