傳統(tǒng)風(fēng)味小吃新安燙面角,創(chuàng)制于民國三年(1914),已有80多年歷史。時(shí)有開封人任老大與本縣人王金斗,于新安縣火車站開設(shè)餐館,出售“老任燙面角”。由于配方科學(xué),制作講究,所制燙面角軟皮緊,晶瑩欲滴,狀如新月,色如瓊玉,鮮香不膩,味美可口,時(shí)有“名揚(yáng)隴海三千里,味壓河洛第一家”的美譽(yù)。
任老大故世后,王金斗改字號為“老王燙面角”,其子王德法承襲父業(yè),使這一風(fēng)味小吃得以發(fā)展。1980年,王德法曾應(yīng)邀赴鄭州傳藝。
至今,洛陽、鄭州等地都有專營“新安縣燙面角”餐館。近年,新安“方記燙面角”在傳統(tǒng)工藝的基礎(chǔ)上又有創(chuàng)新,風(fēng)味更佳,1986年以來,多次被評為“ 洛陽市名小吃”,并于1993年應(yīng)邀參加北京迎“亞運(yùn)”美食節(jié),受到廣泛贊譽(yù)。
其做法是:精選胛臀處的鮮豬肉,肥瘦適量,剁肉成末,加多種調(diào)料與原汁肉湯攪成餡;再用鮮開水把面燙好,搟成皮,包成狀如新月的面餃,上籠清蒸10分鐘即成。
王記燙面角的由來
著名風(fēng)味小吃新安燙面餃,已有七十多年的歷史,在隴海鐵路線上早已聞名。今洛陽鄭州等地均有餐館制作。
新安燙面餃為任老大所創(chuàng),任老大開封人氏,生于1874年,幼年曾在開封"又一新"飯店當(dāng)學(xué)徒。民國三年,鐵路修至陜州,任老大到新安縣落戶,在火車站南側(cè)開設(shè)老任燙面餃館。
老任燙面餃,質(zhì)量講究,別具風(fēng)味,在隴海線上出了名,食者日眾,供不應(yīng)求。車站附近飯館改售燙面餃者蜂起,多達(dá)數(shù)十家,雖不抵"老任燙面餃"之味美,但新安燙面餃聲譽(yù)大振,遠(yuǎn)近聞名。
在經(jīng)營中,任老大把制作燙面餃的技藝傳授給當(dāng)?shù)厝送踅鸲贰H卫洗笕ナ篮螅拿枮?quot;老王燙面餃"。現(xiàn)已傳至三代。燙面餃的制作,選料嚴(yán)格,制作精細(xì),面皮為精白面粉,用開水燙后和成塊,后將面切開放涼,再重新揉勻,切成臍后,搟成圓片。其餡以鮮豬肉為料,選擇前胛后臀,肥瘦搭配,細(xì)剁成丁,放入肉湯原汁攪拌,然后配上大蔥、生姜、韭黃、
白菜心,佐以食鹽、白糖、味精、料酒、醬油、五香粉、小磨油等,打拌而成。包成面餃,狀為新月,食口處內(nèi)側(cè)光滑,外側(cè)皺迭八折,形成花邊,起脊園平。餃肚內(nèi)凹外凸,造形別郅,線條優(yōu)美,每兩干面可包餃五個(gè),上籠清蒸,十分鐘即成。成餃皮薄如紙,包潤如玉,五味具全,鮮香不膩,為小吃中之上品。
Xin’an Steamed Dumplings
Xin’an Steamed Dumplings is a famous traditional snack in Zhongzhou City, which has been created for more than 70 years. This dish chooses materials according to strict standards and has a meticulous making skill. The main materials are flour, fresh pork, shallot, ginger, hotbed chives, cabbages and other condiment like salt, sugar, MSG (monosodium glutamate), cooking wine, soy sauce, sesame oil, etc. The making processes are: steam the flour and knead them into lump, cut it into small lumps when it’s cool, press them into dumpling wrapper; cut the pork into mince, stir them with shallot, ginger, hotbed chives, cabbages and the condiments in broth. The raw dumplings are like crescent with flower-shaped edge. It has a special shape and is very easy to be steamed with 10 minutes only. The finished dumplings are paper-liked thin, jade-liked, tasting delicious, fragrant but not greasy. All these characteristics make this kind of dumplings a superior snack.
